Water Kefir: A Guide to Second Fermentation and Delicious Recipes
Introduction to Water Kefir
Water kefir is a probiotic-rich, fermented beverage made from water kefir grains, raw cane sugar, and molasses. It offers a plethora of health benefits due to its diverse probiotic content and is an excellent alternative to traditional dairy-based kefir for those who are lactose intolerant or prefer a non-dairy option. Unlike dairy kefir, water kefir has a milder taste and comes out less sweet, making it a versatile base for adding various flavors during the second fermentation process.
What is Second Fermentation?
The second fermentation is an essential step in enhancing the flavor and carbonation of water kefir. After the initial fermentation with water kefir grains, raw cane sugar, and molasses, the liquid is strained, and the water kefir is ready to be used for the second fermentation. During this phase, you have the opportunity to customize the taste by incorporating fruits, herbs, or spices, and the introduction of additional sugars helps to create effervescence.
Getting Started with Second Fermentation with two popular recipes
Recipe 1: Ginger and Lemon Water Kefir
Ingredients:
- Strained water kefir (from the first fermentation)
- 1-2 inches of fresh ginger, peeled and thinly sliced
- 1 organic lemon, thinly sliced
- Airtight bottles or jars (with flip-top lids or screw caps)
Instructions:
Prepare Flavoring: Wash and slice the fresh ginger and lemon thinly.
Add Flavoring: Fill each bottle or jar one-third full with the sliced ginger and lemon.
Pour the Water Kefir: Using a funnel, carefully pour the strained water kefir into each bottle, filling it up to about two-thirds full. Leave some headspace to allow for carbonation.
Seal the Bottles: Tightly seal the bottles or jars to create an airtight environment for the carbonation process. Make sure the flip-top lids are securely closed.
Fermentation Time: Place the sealed bottles in a warm spot away from direct sunlight. Allow the water kefir to ferment with the ginger and lemon for about 24 to 48 hours, depending on the desired level of sweetness and carbonation.
Refrigeration: Once you're satisfied with the taste and carbonation, transfer the bottles to the refrigerator to halt the fermentation process. This will help preserve the flavor and prevent over-carbonation.
Recipe 2: Hibiscus Water Kefir
Ingredients:
- Strained water kefir (from the first fermentation)
- 2 tablespoons dried hibiscus flowers
- 1-2 tablespoons raw honey (optional, for added sweetness)
- Airtight bottles or jars (with flip-top lids or screw caps)
Instructions:
Prepare Flavoring: Rinse the dried hibiscus flowers under cold water.
Add Flavoring: Place the hibiscus flowers in each bottle or jar. If you prefer a sweeter taste, add raw honey at this stage.
Ensure the flip-top lids are securely closed.
Fermentation Time: Place the sealed bottles in a warm spot away from direct sunlight. Allow the water kefir to ferment with the hibiscus for about 24 to 48 hours, depending on your preference for sweetness and carbonation.
Refrigeration: Once the water kefir reaches the desired taste and carbonation, transfer the bottles to the refrigerator. This will slow down the fermentation and help maintain the flavor.
